Buffalo mac and cheese is a perfect comfort food that is easy to make and can be customized to suit individual preferences. It is a dish that can be enjoyed by both adults and kids (hold the cayenne if you want to make it less spicy!). The dish is not only delicious but also filling, making it a perfect meal for those lazy days when you want something quick and easy to prepare.

Ingredients

For mac and cheese: 

1 ½ cups of cashews, soaked overnight

2 cups of water, filtered

½ cup nutritional yeast

½ tsp garlic powder

½ tsp paprika

¼ tsp cayenne pepper

1 ½ tsp of salt

7 oz. of vegan cheese, shredded 

12 oz. Elbow macaroni

topping:

1 bag of B. Fine Food's Blazing Buffalo Nana Chips

4 tbs vegan butter

Instructions

  1. Preheat oven to 350°

  2. Soften cashews by soaking them in a glass bowl or measuring cup, and top with boiling water for 5-10 minutes

  3. Cook macaroni according to package directions, al dente 

  4. Drain water from cashews

  5. In a food processor or blender combine cashews, 2 cups filtered water, nutritional years, garlic powder, paprika, cayenne pepper, salt, and cheese until creamy and smooth

  6. Melt butter for topping and while butter is melting crush B. Fine Food's Blazing Buffalo Nana Chips in a food processor

  7. Mix melted butter and Nana Chips

  8. In a greased, 9x13 casserole dish, combine the drained macaroni noodles and stir in cheeses sauce. 

  9. Sprinkle topping evenly over the top

  10. Bake for 15-20 minutes
