Buffalo mac and cheese is a perfect comfort food that is easy to make and can be customized to suit individual preferences. It is a dish that can be enjoyed by both adults and kids (hold the cayenne if you want to make it less spicy!). The dish is not only delicious but also filling, making it a perfect meal for those lazy days when you want something quick and easy to prepare.

For mac and cheese:
1 ½ cups of cashews, soaked overnight
2 cups of water, filtered
½ cup nutritional yeast
½ tsp garlic powder
½ tsp paprika
¼ tsp cayenne pepper
1 ½ tsp of salt
7 oz. of vegan cheese, shredded
12 oz. Elbow macaroni
4 tbs vegan butter
Preheat oven to 350°
Soften cashews by soaking them in a glass bowl or measuring cup, and top with boiling water for 5-10 minutes
Cook macaroni according to package directions, al dente
Drain water from cashews
In a food processor or blender combine cashews, 2 cups filtered water, nutritional years, garlic powder, paprika, cayenne pepper, salt, and cheese until creamy and smooth

Mix melted butter and Nana Chips
In a greased, 9x13 casserole dish, combine the drained macaroni noodles and stir in cheeses sauce.
Sprinkle topping evenly over the top
Bake for 15-20 minutes
